That’s like, the south of the South. The thing is, I’m just about understanding my own people and my own culture and what is it that they like to watch in films. I’m still learning about how to get it right, what they want from a film, what is it that they want to see, what they expect from a character when I’m playing it… I am just about figuring that out,” she said.According to Samantha, she is still in the process of understanding the preferences of the audience down South, and will be a “complete alien” in Bollywood. “I have no idea about the world that is Bollywood. I will just drown and be a complete alien,” she said.”I still feel like I have more to give them, down South,” she added.Samantha, who made her big screen debut with Gautham Menon’s Telugu film Ye Maaya Chesave, has delivered several hits including Theri, Rangasthalam, Mersal and Super Deluxe. Press Trust of India ChennaiOctober 18, 2019UPDATED: October 18, 2019 21:35 IST Kalki, the self-styled godman (File Photo)Searches in multiple premises spread across the Southern States in firms and trusts founded by spiritual guru ‘Kalki’ Bhagwan has led to the detection of undisclosed income of more than Rs 500 crore, the Income Tax department said on Friday.The undisclosed income covers unaccounted cash receipts of about Rs 409 crore.A total of Rs 43.9 crore in cash and US currency worth Rs 18 crore was seized and the total value of the seizure is about Rs 93 crore, which includes gold and diamonds, a tax department official release said.It was found that the group was investing in tax havens and the tax department is probing “diversion of income taxable in India to offshore entities.”A string of 40 premises connected to a conglomerate of trusts and companies founded by the spiritual guru that ran “wellness courses” were searched on Wednesday.The searches, which are still in progress, has covered premises in Chennai, Hyderabad, Bangalore and Varadaiahpalem in Andhra Pradesh, a stone’s throw from the Tamil Nadu border.The entities founded by the guru, who propounded “oneness philosophy, “offered “wellness courses” and training programmes in philosophy and spirituality at various sprawling residential campuses at Varadaiahpalem, Chennai and Bengaluru.The courses attract residential customers from abroad and the group earns substantial receipts in foreign exchange.The group, with interests in several sectors, including real estate, construction and sports in India and abroad, “is presently managed and controlled by the spiritual leader who laid the foundation of the group, and his son.”Raids were initiated on a tip-off that the group has been suppressing receipts that are ploughed into investments in abroad and landed property in Andhra Pradesh and Tamil Nadu, according to the department. During the searches, evidence was found that the group has been regularly suppressing its receipts at its various centres or ashrams.advertisementEvidence was found with key employees, who maintained a record of cash collections that were kept outside the accounts for use in making investments elsewhere and also for paying for properties over and above documented values.”It is learnt that the group also earned unaccounted income in receiving cash from property sales over and above documented values.A preliminary estimate of such unaccounted cash receipts is Rs 409 crore from Financial Year 2014-15 onwards,” the release added.Such unaccounted cash receipts are also evidenced by huge quantities of cash and other valuables found at the residences of the spiritual guru and his son, and at one of the campuses.A total sum of Rs 43.9 crore in cash was seized by the department during searches.American currency worth about Rs 18 crore and foreign exchange in other currencies were also seized.Undisclosed gold jewellery of about 88 kg valued at over Rs 26 crore, and similarly diamonds (1,271 carats), valued at about Rs five crore, were also seized.”The total value of the seizure so far is approximately Rs 93 crore. The undisclosed income of the group detected so far is estimated at more than Rs 500 crore. The Manual caught up with Byres to get a glimpse of his cookbook’s offerings.Your cookbook is all about making food from scratch—why is it worth learning?Nowadays, people are detached from their food. For me, knowing how to make things from scratch is exciting. It lets me have a personal relationship with the ingredients I’m working with. With the book, I wanted to demystify scratch cooking and make people say: “Wow, it’s not that hard. Who would’ve thought?” Some people think they can’t cook this way and that’s not true. If you don’t think you can’t make something, the only thing stopping you is you.What are some tips you lay out about firewood cooking ?In the book, I break down down the different types of wood and the importance of ash and charcoal. I also talk about how to build a fire to last a long time and to understand direct and indirect heat, the two primary methods of cooking in the book. This book will even show you how to build a smokehouse if you really want to. One thing to understand about this kind of cooking is that it isn’t so precise. There is no “set it to 350 degrees and come back in an hour.” Sometimes you’re just going to have to roll with it.Is the book user-friendly for those who live in urban areas and don’t have access to outdoor cooking equipment? I tried to add that smoke flavor that comes from firewood cooking in all of my recipes. So you might not have the capability to light a big fire in your backyard but you would have the capability to make the barbecue spice mixes. Take the beef spice mix with coffee, chili powder, cumin, brown sugar and smoked paprika. That’s something you can make in your kitchen, rub on a strip steak and sear on a pan. It would give you the flavor of a backyard grill.Most of the recipes seem geared for large gatherings. Was that your intention?All of them are meant to be shared at a huge table. With the book, I encourage family-style meals. I think it’s awesome if you can have twenty to twenty five people over, roll up your sleeves and just have a great time. That’s what I remember as a kid at my grandmother’s farm in Northern Idaho. During harvest season, everybody ate at her house–my aunts and uncles, and all of the people helping on the farm. It was like a mini restaurant. The woman would cook, then the men and the kids would show up. It was like Thanksgiving every day.What’s something you want readers to take away from Smoke?I would like people to take my recipes and create their own. For instance, my book has recipes for basic spices. I tested most of the spice mixes in my house and kept them jarred in my cupboard. My mother-in-law would sometimes use these spice mixes, which I intended for grilling, to make dinner. She would take a tablespoon of the poultry spice and add it to stir fried vegetables or throw it in her beans. While that’s her interpretation of that recipe, you can take that same spice and sprinkle it on a salad for a completely different dish.Are there key tools we would definitely need before trying out your recipes?A 12-inch cast iron sauté pan, which is great for working in a fire or even on a stove at home. Other essential tools: a charcoal chimney, a good knife and tongs. But it’s all about what you want to do. My dad used to say, “Plan your work and work your plan.” So if you want to do pickling, you’re going to need mason jars and a stockpot. That is, they use natural ingredients to make their spirits (over a pound of real fruit per batch). They start with a corn base that they, according to their website, distill five times before infusing the fruit into their spirit.The fruit in question here, the marionberry, is a type of blackberry (and currently the most popular kind) that was developed by a team of students at Oregon State University. (For the horticulture nerds out there, the marionberry is a mix of the “Chehalem” and “Olallie” cultivars of blackberry.)Tasting NotesAppearance: A deep royal purple that could be easily confused for a Pinot Noir or another similar red wine if judging on appearance alone.Nose: Seeing as we judge with our eyes before anything, and knowing this is a flavored vodka, you might be expecting the worst—a saccharine trip that’ll make you never want sugar again, but the nose on this vodka alerts you to something else. There is sweetness on the nose, but in the form of a blackberry jam that sits on top of slight hints of neutral grain spirit, which remind you that you are indeed about to drink a vodka.Palate: A bit of a surprise, considering the nose. While the natural sweetness from the marionberries is there, this is not liqueur-sweet (despite, again, visual bias). This fact in and of itself is a great surprise. The flavor is rich, with earthy blackberry notes coming through strong. Sweetness cedes way to tartness, as if tasting fresh berries picked off the bush.Finish: A relatively short, tart finish with just the tiniest hint of a burn, sort of like the last bite of a warm blackberry pie.Final Thoughts: The first sip of this had me convinced that this would be my favorite summer addition to sparkling wine for spritzes. There is enough fruity flavor present that it will come through the ice-cold bubbly well. I wouldn’t drink this straight, but it makes a delightful ingredient for summer cocktails (or for kicking your pancake syrup up a notch or three—take that IHOP).Wild Roots Marionberry Infused Vodka is 35% ABV and be purchased for $42.45 here.
The Government is committed to working with Pan-Caribbean Limited to get their sugar production back on track.Minister of Agriculture and Fisheries, Hon. Roger Clarke, gave this undertaking during his contribution to the 2013/2014 Sectoral Debate in the House of Representatives on May 8. Production at Pan-Caribbean Limited, comprising Frome, Monymusk and Bernard Lodge, which constitute 70 per cent of the sugar industry, has been down by 23 per cent in comparison with 2010/2011, the last year of Government control.“Obviously this is disappointing. If Pan-Caribbean takes the necessary corrective action, then we could see their production increase in the 2015/16 crop year,” Mr. Clarke said. The Minister informed that despite privatization of the sugar industry, the projected production of sugar for this year is 125,000 tonnes, compared with 131,589 tonnes produced last year. He added that last year the Complant-owned factories produced 65,000 tonnes of sugar, while this year they did 54,000 tonnes.“Clearly, there are some deficiencies within the Complant operations. While there is some expansion in cane production from cane farmers in the area, the agronomic practices on the Complant operated farms are less than desired,” Mr. Clarke informed. The Minister noted, however, that the other divested estates, Golden Grove and Everglades, are making serious strides. “For instance, production at Everglades moved from 3,984 tonnes last year to 6,674 tonnes this year, and projections are for a 56 per cent increase in production for the 2013/14 crop year, based on their current expansion in cane production,” Mr. Clarke said. At Golden Grove, production fell marginally because of the severe impact of Hurricane Sandy (in October last year). However, in the 2013/14 crop they are poised to increase by 14.5 per cent due to the expansion of sugar cane production currently underway. Worthy Park and Appleton continue to hold their own.In the meantime, Mr. Clarke refuted claims made by the Opposition spokesman on Finance, Audley Shaw that the Government had not fulfilled its obligations to Complant and was therefore jeopardizing the construction of a US$100 million refinery by Pan-Caribbean. “The fact is that the only outstanding matter has to do with the separation of some workers from the JPS lines that supply Complant operations. This is going to cost the Government $200 million and we are working with the Ministry of Finance to see how that can be accommodated,” the Minister said. We have taken note of the concerns of visitors that when they exit the port there has not been much to see on the outside. All that will change when the $1.1 billion worth of (additional) projects start to kick in,” the Minister stated.He was speaking at the Falmouth Heritage Expo and launch of the Heritage Map of Jamaica on October 18.Meanwhile, Mr. Bartlett said the Falmouth Port continues to lead the way with cruise passenger arrivals, which totalled 48,910 in August, representing a 5.4 per cent increase.He also cited the continued presence of Royal Caribbean’s Oasis class vessels- Harmony of the Seas, Oasis of the Seas and Allure of the Seas- as proof of the cruise- line’s sustained commitment to Falmouth and, by extension, Jamaica as a preferred destination.“We can all recall earlier in the year when there were concerns raised as it relates to ships being…rerouted from the Falmouth Port. What we are doing is to build out the town and port infrastructure as well as the visitor experience so that when the cruise ships dock, there is good reason for visitors to disembark,” he added.Meanwhile, Mr. Bartlett said he was pleased to see that Falmouth has been well documented on the updated map of Heritage Sites of Jamaica.He pointed out that the map, which was produced by the Tourism Product Development Company, “is more comprehensive and interactive, showcasing cultural and natural heritage sites across the island.”“It caters to visitors and locals looking for adventure (and) those looking for nature, wellness, hiking and camping in the mountains as well as those interested in our plant and aquatic life.Additionally, it caters to those who are interested in historical forts, schools and churches,” Mr. Bartlett further stated.
